A brew made from roasted date seeds can be safely consumed as an alternative to the coffee drink and served to people who are sensitive to caffeine, as it is caffeine-free. Moreover, the papaya seeds are said to have more medicinal potential because it contain high antioxidants. The physical properties, chemical properties, antioxidant activity, and sensory test on the DPB coffee has been determine. The date seed contained less of moisture content compared to the papaya seed. For pH test, pH the pH has an average pH 5.3300. For caffeine test, all the DPB coffee’s formulations showed the absence of caffeine content. For TPC assay, the formulation DP4 indicated the highest total phenolic content. For the sensory evaluation, there is no significant difference of the total acceptability of DPB coffee.
