This project is an innovation resulting from biscuits which are banana skin biscuits or called 'Nanakies' which use banana skin as the main ingredient which will be combined with other ingredients such as butter, baking soda, baking powder, sugar and salt. The innovation of banana skin biscuits aims to reducing food waste and making use of ingredients that were previously often overlooked. The idea to use banana peels as the main ingredient in making biscuits emerged from the awareness of the problem of food waste and the potential nutritional value hidden in banana peels. The process of making banana peel cookies begins with collecting banana peels that are usually considered waste and thrown away. After that, the banana peel is dried by methods such as sun drying or mechanical drying to remove moisture and extend its shelf life. Banana peels contain fiber, potassium, vitamin B6, and antioxidants. By using banana peels in biscuits, some of the nutritional value that was previously wasted can be retained and utilized by consumers. Therefore, banana skin biscuits become a healthier and more beneficial option than conventional biscuits which do not have additional nutritional content.
