Potatoes are one of the main food sources that are widely used around the world because of their high nutrient content such as carbohydrates, vitamin C, and potassium. The flesh can be used in various dishes but the peel is often wasted. Did you know that potato skins, which have been underestimated for so long, actually have great potential in the food industry? This is because potato skins contain important nutrients and can be processed into various valuable products. Thus, our innovation project was born, which is based on potato skins as the main ingredient. The title of our project is Potato Skin Sauce. It is a delicious and nutritious sambal. The objective of producing food from potato skins is to utilize waste materials so that they can be turned into something useful and valuable. In addition, this production aims to reduce food waste that often occurs in daily life. In addition, this effort also aims to produce nutritious food products that are safe for consumers to eat. Next, producing food from potato skins can evaluate the potential of the material as an alternative in the food industry that can produce various other types of food based on potato skins. Finally, this objective is also to increase public awareness of the importance of reusing waste materials in a creative and environmentally friendly way while saving on food preparation costs. It is clear that potato skin sambal is a creative idea that helps reduce food waste and provides benefits in terms of economy and sustainability.
