This project uses carrot scraps to create a natural, chemical-free highlighter ink. β-carotene is extracted using 75% isopropyl alcohol, producing a bright orange-yellow ink that writes smoothly and shows slight fluorescence under UV light. The ink remains stable for 2–3 weeks. This innovation supports SDG 3: Good Health and Well-Being by providing safe, non-toxic stationery and SDG 12: Responsible Consumption and Production by reducing food waste, demonstrating that common food residues can be transformed into sustainable, eco-friendly products.
